Two glasses of sparkling wine can be very different from each other

The main factors specific to each grape variety that can influence the final style of a sparkling wine are 4 in number, namely:

  • if it is an aromatic grape variety, each grape variety gives the finished wine different characteristics and aromas specific to each grape variety. This can be compared to the different species of apples which will be more or less acidic, more or less sweet and with aromas specific to each variety.

  • if it is a neutral grape variety, most of the aromas in the finished wine will come almost exclusively from the different vinification methods and aging methods used

  • the ability of the grape variety to retain acidity during the maturation phase (in barrels and in bottles)
