It used to be usual to pour a little wine over the dish where the soup had been served in several regions of southern and central France. This wine had to be consumed straight off the plate, which was presented to one’s mouth, according to tradition. The “chabrot” is still commonly performed in the Béarn region (located in the South West part of France), but it is now nearly a folk survival.
