“Vin Santo” is an Italian term that can be literally translated as “Holy Wine”. It is an Amber-Colored sweet wine (dessert wine) mainly produced in Tuscany (Italy), other central Italian regions, and sometimes in the Trentino region (Italy). It is often produced with Trebbiano and Malvasia local white grapes that have been dried on straw mats beneath the rafters in the warmest and best-ventilated area of the wine estates (usually boutique estates). This process of drying the grapes helps concentrate the sugar inside the grape.

It is to be noted that the Greek Island of Santorini also produces some traditional local Vin Santo.
