The practice of paying employees in wine is probably older than the practice of paying salaries in salt. In ancient Persia, for example, wine rations offered to workers were tightly controlled and frequently considerably beyond any possible individual’s personal consumption.
More recently, laborers, particularly grape-pickers on large Bordeaux estates, would expect to get some wine in addition to their salaries.
The most famous and now illegal, example of paying workers with deliberately stupefying amounts of wine was the so-called ‘DOP’ system that was once common in South Africa.
